What do record-breaking rainfall, a beautiful ranch, espresso martini service, and a spring wedding menu designed down to the last pecan have in common? A one-of-a-kind Texas wedding for our clients, Haylie and Jack.
For Haylie and Jack, food wasn’t just another wedding detail. Instead, it was a way to tell their story—one they wanted to share with their guests. From Tex-Mex stations inspired by their favorite late-night snacks to cocktails crafted to the perfect shade of pink, every bite was intentional. However, even the most meticulously planned wedding comes with surprises—like torrential rain, stuck catering trucks, and a team working behind the scenes to ensure that every dish was as perfect as the couple imagined.
Now, this iconic Texas wedding is up for a national award, and we’re taking you behind the scenes for a look at the Vestals Catering menu, the moments, and the magic that made it so unforgettable.
The goal: A wedding menu full of surprises and delights
Haylie and Jack’s wedding was one of the most breathtaking celebrations we’ve had the honor of catering. From the impeccable event space design by Jackson-Durham to the deeply personal, custom-crafted food and beverage menu, personalitywas woven into absolutely every element. As a wedding planner herself, Haylie knew what made an impactful wedding…
…and it showed.
She and Jack wanted a distinct, personal menu—not just ‘another wedding meal.’ So, from the start, we set out to create an experience that unfolded in unexpected, unforgettable ways. This started with the main course options but went far beyond that, transforming the evening into an interactive, surprise-filled event where guests never knew what delicious detail might come next.
Since the tented wedding was hosted on the groom’s family ranch, the culinary delights had to pay homage to the Lone Star State with a Texas essential: rich, delicious ribeye tacos. We also gave a nod to the rustic setting with house-smoked brisket served on top of flavorful fried rice.
The night unfolded in a series of creative, unexpected food moments. After passed appetizers and golden-brown passed smash burgers—branded with the couple’s monogram and served with custom branded paper, of course—the food stations opened up. Then, espresso martinis flowed right as the dance floor opened. As a late-night surprise, guests were greeted with warm chocolate chip cookies, fresh from the oven.
Every moment of the evening was infused with a touch of intention, from the first bites of bacon-wrapped apricots to the final chocolate chip cookie. It made Haylie & Jack’s luxury wedding a true celebration of love, hospitality, and flavor.
Haylie & Jack’s custom spring wedding menu
For Haylie & Jack, the wedding menu went beyond food. Instead, they wanted it to be an experience. Their vision was to have food that felt fun, unexpected, and reflective of their love story—and to treat their guests along the way.
The details and intention showed in every single dish and drink served at their ranch wedding, from the colors to the ingredients. Guests could choose from a variety of food stations, including chef-attended Tex-Mex, Italian, and Asian fusion stations serving everything from ribeye tacos to creamy orzo to chili garlic shrimp.
Here’s a peek at some of their favorite custom touches:
- A Tex-Mex station with a niche Texas twist: Haylie & Jack love bean burritos and H-E-B tortillas—so naturally, they wanted to bring that to life! We sourced the grocery chain’s famous buttery tortillas for an authentic taste, ensuring every guest got to experience (and understand) the obsession.
- Signature cocktails: For Haylie and Jack, the details were everything—and we custom-crafted Spicy Prickly Pear Ranch Waters to exactly match the pink in Haylie’s color scheme (they were STUNNING). After tasting six different custom cocktails, we finally landed on the perfect balance of flavor and color, serving them in mini Topo Chico bottles on custom cigarette trays for an extra touch.
- Flavor with meaning: The pecans for one of their appetizers—a Whipped Texas Chevre Crostini—were sourced directly from Jack’s family orchard, adding another meaningful touch to the menu. Jack’s favorite meal, a Philly cheesesteak, also made an appearance, but with one important detail: they were served exactly how he liked it—with no peppers.
Behind the scenes of an award-winning wedding
As every bride and wedding professional knows, challenges are inevitable. On Haylie and Jack’s wedding day, a record-breaking downpour challenged every plan. Water seeped into the tent, catering trucks got stuck in the mud, and freshly painted custom trays fell victim to the Texas humidity.
However, seamless service is what we do best.
Armed with touch-up paint, expert event partners, and a team that is always dedicated to the best possible result, it went off beautifully. Our team might have been wet and muddy, but the food was incredible. By the end of the night, the only thing guests noticed was how seamless and intentional the reception felt.
Well, and how delicious it was.
A celebration of love, hospitality, and flavor
Now, months later, Haylie and Jack are enjoying newlywed life—and their wedding is up for a national award. After all, their celebration was more than just a stunning event; it was a testament to the love they have for each other and the hospitality they wanted to extend to every guest. It was an honor to play a part in bringing that vision to life.
As Haylie and Jack’s spring wedding showed, the best weddings aren’t just beautiful. They’re packed with meaningful details, personal touches, and delicious food that surprises and delights.
