As the season of gratitude rolls in, it’s the perfect time to remember that meaningful events can be so much more than just celebrations — they can be catalysts for change. That’s why, as a nonprofit caterer, we focus on the ide that every toast, shared plate, and detail can be thoughtfully designed to fuel something bigger: impact.
Nowhere is this more evident than at The Cattle Baron’s Ball, a legendary Texas nonprofit event that’s been turning good food & good company into life-changing fundraising for over 50 years. This year, we were honored to cater the ball again, helping transform generosity into something tangible.
From the first passed hors d’oeuvre to the final apple pie shooter, every detail played a small part in fueling one incredible mission.
A look at The Dallas Cattle Baron’s Ball
If you’re a Texan, you’ve probably heard of The Cattle Baron’s Ball. Since 1974, the organization has raised over $105 million for cancer research, and the ball itself is the world’s largest single-night fundraiser for the American Cancer Society.
This year’s rock-and-roll-themed event was headlined by Post Malone, adding a new chapter to a star-studded legacy that includes artists like George Strait, Johnny Cash, and Carrie Underwood. But, while the headliners bring the crowds, it’s the cause that makes the event so special.
Every dollar raised fuels the American Cancer Society’s nationwide programs, research, and advocacy efforts, providing support, treatment, and hope to millions. And when we say funds raised, we mean it: last year’s event raised $7.1 million.
Ticket sales make up part of these funds, but so do the live auction & raffles. This year, people could bid on everything from a private Park City stay and Texas Rangers suites to a private dove hunt and Diamonds Direct jewelry. People also had the chance to win some incredible raffle prizes — think: a vehicle from Park Place Dealerships, a $15,000 shopping experience at NorthPark Center, a $10,000 debit card from PlainsCapital Bank, or a $10,000, 1:1 Lucchese custom boot experience.
And, behind the scenes, hundreds of volunteers and partners, including our Vestals Catering team, came together to bring every detail of the event to life —turning generosity into an unforgettable, luxurious, and purposeful experience.
Nonprofit catering done right: A Texas-sized menu for a Texas-sized cause
Serving thousands of guests in a single night is no small feat, but for our team, it’s one of the most rewarding challenges of the year. Every station, every garnish, and every plate was designed to reflect the spirit of the evening: generous, bold, and deeply Texan.
(Also, a warning… This is about to make you hungry!)
The night began with a VIP hour of passed hors d’oeuvres, which were easy to eat while also being unique and rich in flavor. This year, that looked like Butternut Squash Flautas with Sage Brown Butter Maple Crema, Shredded Short Rib Potato Skins topped with Blue Cheese Crema, Rosemary Potato Chip–Crusted Chicken Bites with Onion Chive Crema, and Blood Orange Chipotle–Glazed Pork Belly with Mustard Aioli.
From there, guests got to enjoy a whole variety of interactive tasting stations. Think: Lobster & Shrimp Quesadillas with Yuza Crema, Dr Pepper Short Ribs over White Cheddar Polenta, and a full Bacon Station with Brown Sugar–Candied Bacon, Bacon-Wrapped Quail, and Smoked Brisket Jalapeños.
(We told you you’d be hungry!)
Later in the evening, we opened the general admission stations, serving more than a thousand plates of Texas-inspired comfort favorites like Frito Pie in a Bag, Brisket and Pulled Pork Sliders, and Smoked Chicken Wings.
Dinner service brought guests together around two expansive buffets, featuring Prime Beef Brisket carved to order, Chicken Sausage with Fennel and Apples, Asadero & Jalapeño Tamales, and Classic Four-Cheese Macaroni. And to end on a sweet note, the mini dessert display offered Pumpkin Spiced Cake Bites, Caramel Apple Pie Shooters, and Bourbon-Pecan Pie Bars — a perfectly indulgent finale to an unforgettable night.
Are you ready to blend hospitality with heart? That’s where we come in as your favorite Texas nonprofit caterer.
At Vestals, we believe food has the power to connect: to spark conversation, build community, and move missions forward. Our team approaches every nonprofit catering partnership with the same care and creativity that define all of our events, from intimate dinners to large-scale galas.
Over here, it’s about so much more than the menu. It’s about crafting an experience that reflects the heart of the organization, and creating moments that feel as personal as they are purposeful. And for us, part of catering Texas nonprofit events like The Cattle Baron’s Ball isn’t just about serving thousands of plates. It’s about helping to serve causes that touch millions.
